Green Enchiladas

10 oz. package Colby/Jack cheese, grated
1 small onion, chopped
1 Anaheim pepper, chopped
1/2 cup sour cream
6 corn tortillas
8 oz. Tomatillo Salsa 

 

In skillet over medium heat, briefly heat each tortilla, turning once. 
Pour a small amount of Tres Chic TOMATILLO SALSA in the bottom
of a square baking pan. Just to cover. Fill each tortilla with mixture of
cheese, onion and pepper. Roll. Line up in pan. Spread sour cream over all.
Pour remaining Tomatillo Sauce over all. add sprinkling of cheese. Cover with
foil. Bake at 350 for 15-20 minutes until cheese is melted and bubbly.
